Meet Travis Clem: From Photographer to Fat Ass Ranch’s Head Brewmaster
Here at Fat Ass Ranch Winery and Brewery, we like to keep things fun, a little quirky, and full of flavor—just like our beer. And the guy behind a whole lot of that flavor? That would be Travis Clem, our brewmaster with a creative streak, a laid-back vibe, and a serious love for all things beer.
From Camera Gear to Brewing Gear
Travis didn’t follow the usual path into brewing. Originally from Winchester, Virginia, he moved to the Fredericksburg area a couple of years ago and found a second home in the local craft beverage scene.
Before he ever brewed a single batch, Travis worked behind the camera as a photographer for wineries and breweries. Through his lens, he captured the people, the process, and the atmosphere—all the essence of craft culture.
But over time, that curiosity turned hands-on, and the artistry of brewing pulled him in for good. He wanted to be part of it, not just document it. Eventually, that curiosity led him straight into the brewhouse.

Since joining Fat Ass Ranch & Brewery as a brewmaster in September 2024, Travis has brought a relaxed, creative energy to everything he brews. While India Pale Ales were his first love, he’s developed a deep appreciation for a wide range of styles—especially the classic brews making a comeback, like oatmeal stouts and red ales. One of his personal favorites? A peach cream ale made with fresh, local Fredericksburg peaches, offering a smooth sweetness with a crisp finish that hits just right in the Texas heat.
Brewing for Everyone: Making Craft Beer Welcoming
What makes Fat Ass Ranch special to Travis is the chance to connect with everyday drinkers—those who might not consider themselves “craft beer people” just yet. He sees each pint as a chance to educate, convert, and maybe surprise someone with something new. Whether it’s crafting recipes, dreaming up label ideas, or coming up with wild beer names, Travis leans into the fun side of brewing just as much as the technical side.

For Travis, brewing should never be uptight. It’s about community, creativity, having fun, and not taking yourself too seriously. “This is the most fun industry to be in,” he says. “And if you ever start to stress, well—just pour a pint.”
