Meet The Winemaking Legend Behind Our Bold Wines
A Winemaking Journey Rooted in Passion and Expertise
John Catalano leads our winemaking team with a wealth of experience spanning Texas and California. His impressive 25-year career includes producing distinctive wines and hands-on vineyard establishment and management. John’s academic background is just as solid. He holds a BS from the University of Maryland, an MBA from the University of Dallas, and completed Viticulture and Enology certificates from Texas Tech University.
Where Great Wines Begin: In the Vineyard
John’s philosophy is simple but powerful: great wines start with great grapes.

To make that happen, he spends a lot of time in the vineyard, getting to know the soil, the climate, and which grape varietals fit best for our Bent Oak Collection. He wants to produce the best Texas wines for our valued customers. This hands-on approach, called vineyard enology, means John is involved in winemaking from the very beginning — right where the grapes grow.

From Brewing Beer to Mastering Wine
John’s love for fermentation actually began with brewing beer. There’s an old saying in winemaking: “It takes a lot of beer to make good wine!” After watching his wife enjoy a really nice Chardonnay, John decided to take his brewing and fermentation knowledge and dive into winemaking. To really understand the process, he also studied grapevine physiology and grape growing.
25 years later, John has been making wines and growing different grape varietals like Tempranillo, Blanc du Bois, and Syrah. His winemaking journey has taken him from California’s Sonoma County — known for its steady, predictable climate — to the wild and sometimes unpredictable weather of Texas. Those Texas extremes bedevil even the most skilled winemaker, but John has embraced the challenge with heart, enthusiasm and skill.

Building Bent Oak Winery: A Dream Becomes a Legacy of Quality and Community
In 2014, John and his partners founded Bent Oak Winery in Cedar Park, Texas, with a goal to bring high-quality, hand-crafted wines to the north Austin area. Under John’s leadership, the winery grew from producing just a few hundred cases a year to nearly 4,500 cases by 2019, with a loyal membership of over 600 wine lovers.
John’s influence goes beyond Bent Oak wines. He served as head of the winemaking committee and later as President of the Texas Hill Country Wineries Association, which includes over 65 member wineries from Austin to Fredericksburg. His passion for winemaking is contagious, but he likes to keep things lighthearted, saying, “We make serious wines for serious wine lovers, but don’t take ourselves too seriously.”
Simply, the journey, while certainly not for the faint of heart, has been fun and fulfilling, and it absolutely continues to be.

In 2024, John passed the torch on Bent Oak Winery and joined the team here at Fat Ass Ranch & Winery. It wasn’t just a career move—it was the start of something exciting. Now, he leads our winemaking operations with the same energy and commitment he’s always had, helping us bring bold, beautifully crafted wines to even more people across Texas and beyond.
Crafting Wine with the End in Mind: John’s Winemaking Philosophy
John’s approach to winemaking is thoughtful and intentional. He starts with the end goal — the perfect bottle — and works backward from there. Take Tempranillo, for example: John first decides which qualities of the varietal he wants to highlight. From that point, he plans every step — from barrel choice and fermentation yeast to aging and grape sourcing.
This backward engineering ensures every decision is made with care and quality in mind, resulting in wines that consistently deliver exceptional flavor and character from vineyard to glass.
