Fat Ass Off the Ranch: What Makes This Downtown Fredericksburg Pub Different
Type “best brewery Fredericksburg TX” into Google and you’ll find plenty of great names worth knowing. That’s no surprise. Fredericksburg is packed with tasting rooms, breweries, and places to enjoy a good Texas pour. But after you’ve explored a few flights and worked your way through the chalkboard menus, you might start wondering: what else does this town have to offer? Something a little less polished. A little more laid-back. And, most importantly, a whole lot more fun.
That’s where Fat Ass Off the Ranch comes in. Located in the heart of downtown Fredericksburg, Texas, this laid-back pub brings the Fat Ass Ranch spirit off the ranch and into town. This pub is brewing its own beer while also pouring wine and frozen sangrias. Pair your drink with pizza, nachos, or a charcuterie board, and you’ve got a spot that’s all about good drinks, good food, and a good time.
Once you’ve experienced Fat Ass Off The Ranch, you’ll see why there’s more to Fredericksburg’s Main Street scene than the usual tasting-room loop.
The Ranch, Right on Main Street
We built “Off the Ranch” to bring the actual spirit of Fat Ass Ranch Winery & Brewery into Main Street Fredericksburg. You’ll feel the same laid-back, welcoming vibe you get at the Fat Ass Ranch – pub style on East Main St.
You can grab a cold beer, pour some wine, cool off with a frozen sangria and wine slushies. Enjoy nachos, charcuterie boards, or even order a hot pizza for the table. Then just sit back and enjoy Fredericksburg.
Fat Ass Off The Ranch Grand Opening and Ribbon Cutting
No dress-up, nothing complicated, just casual, lively, a little quirky, and completely at home in the Texas Hill Country. It’s a Fredericksburg hangout that feels unmistakably Fat Ass: unpretentious, energetic, and built for enjoying the moment.
What Actually Sets This Downtown Fredericksburg Pub Apart
It comes down to four things: the drinks, the food, the atmosphere, and the people.
Each brings something different, but together they add up to a place that’s just easy to enjoy. You’re not choosing between a brewery, a restaurant, or a bar for after you’re done sightseeing. At Off the Ranch, you get all three at once.
We’re not trying to be the fanciest name on Main Street or another tasting room that blurs into the next one. We’re a place to eat well, drink what you actually like, relax with your people, and have a good time. That’s it. Make your visit as short or as long as you want.
Here’s what makes us stand out.
The Drinks
This is the part that earns us a real spot on any “best brewery Fredericksburg TX” list. Our drink menu covers Fat Ass craft beer, wine, and frozen sangrias, so you’re never stuck with just one option. Crisp and light, fruity and refreshing, or something with more body – pick your lane.
Wine
Wine’s a huge part of what we do, but don’t expect a stuffy list. Fat Ass wine is approachable and full of personality, and our most memorable bottles put a Texas spin on flavors you already know.
New to us? Start with Country Peach Wine. It captures Texas peach sweetness and feels completely at home in the Hill Country. Watermelon Wine brings a light, fruity summer character. Holiday Cheer wine is a seasonal favorite sweet red wine that is slightly sparkling with notes of cranberry and citrus.
Beer
If beer’s more your speed, we’ve got you. Our craft beer lineup runs from easy-drinking to bold and flavorful, so both the casual drinker and the hardcore hophead find something.
Ass Kisser Lager is the lightest pour we make, crisp and refreshing, perfect for a hot Fredericksburg afternoon. Dumb Ass Blonde brings tropical and stone-fruit notes without asking much of you.
Want more character? Peach Wheat Ale delivers natural peach and apricot in a refreshing wheat beer. Craving something richer? Kick Ass Amber has toasted caramel and fruit, while Lucky Arse Irish Red Ale leans earthy and roasted.
Hop heads, we didn’t forget you: West Coast IPA goes big with floral and citrus notes, and New England IPA keeps it crisp and citrus-forward. Prefer something dark? Oatmeal Stout brings creamy roasted-nut and espresso flavor.
And you don’t have to commit to just one. We pour flights of four, so you can taste your way through before deciding what deserves a full pint. Great option if you’re out with friends or just want to explore before picking a favorite.
Bring a beer person and a wine person in the same car. Nobody compromises. Nobody has to peel off for a second stop across town.
The Frozen Drinks
Our new yard cups are 20 oz with a hanging strap that can be filled with one of eight different selections of frozen sangrias. They are sweet, tart, spicy and delicious!
- Blueberry lemonade (non alcoholic)
- Cherry Lime
- Red Sangria
- Peach
- Strawberry
- Spicy Sauvignon Blanc
- Blackberry
- Blueberry Lemonade
The Food
Good drinks need good food, and we keep the kitchen just as relaxed. Our menu runs on comforting, shareable stuff, the kind you order a few of and just settle in with.
The pizza comes hot out of the oven, whether you want a quick bite or you’re turning drinks into a full meal.
Looking to share? Grab a charcuterie board and let everyone pick at it while you catch up. Or, try a warm pretzel with beer cheese or a plate of nachos when you want something hearty.
The food fits the whole vibe here. Nothing’s overly formal or fussy. It’s built for a cold beer, a glass of wine, or a frozen sangria, sitting around a table with people you like.
Order what sounds good, share a few bites, don’t rush. Because honestly, taking your time is half the point of coming here. Good food, a cold drink, and a table full of people you actually want to be around- that’s a solid way to spend an afternoon in Fredericksburg, Texas.
The Atmosphere
Some places are built for a quick in-and-out. We’re built for staying awhile, a comfortable spot to break from exploring Main Street, grab a drink, order something to eat, and just enjoy who you’re with.
The mix of drinks, comfort food, and a relaxed setting makes it easy to settle in instead of feeling like you need to eat and move on.
What really sets our vibe different from other pubs and restaurants in Fredericksburg, is how naturally we carry the Fat Ass personality. That fun, casual spirit doesn’t get left behind. It travels with us. At Off the Ranch, that means a place to loosen up, talk, laugh, and enjoy Fredericksburg at your own speed.
This isn’t somewhere you just visit. It’s somewhere you hang out. Local or first-time visitor, pull up a seat, order what looks good, and get comfortable.
The People
A lot of what makes a place stick in your memory comes down to how you’re treated when you walk in.
Our goal is simple: make people feel welcome, whether it’s their first time in or they’ve already got a go-to drink. That friendly, easygoing energy is just who Fat Ass is. Walk in as a guest, and pretty quick, it feels more like you’re hanging out with friends.
Our staff remembers regulars, cracks jokes, and treats first-timers like they’ve been coming for years. That kind of warmth doesn’t come from a training manual. It’s hard to fake and even harder to find.
Something to Take Home
Want to bring a piece of it back with you? You can. Fat Ass Off the Ranch is part of a brand bigger than what’s in your glass or on your plate.
